Resumen La resistencia a la insulina se explica como un defecto en la unión de la insulina con su receptor y está asociada con numerosas enfermedades, como la obesidad o la diabetes tipo 2, entre otras. La resistencia a la insulina se ha relacionado con la deficiencia de vitaminas y minerales, especialmente de aquellos involucrados en el estrés oxidativo. La dieta mediterránea, una dieta basada en el Healthy Eating Index o la dieta Dietary Approaches to Stop Hypertension (DASH) son patrones dietéticos que se han asociado con un menor riesgo de presentar resistencia a la insulina en edad infantil. Por tanto, una dieta rica en vitaminas y minerales antioxidantes, fibra, calcio y ácidos grasos poliinsaturados y baja en azucares libres, sodio y ácidos grasos saturados puede disminuir el riesgo de presentar resistencia a la insulina en este grupo de edad. Además, otros factores nutricionales, como evitar la comida rápida, cenar en familia, no comer mientras se ve la televisión o el consumo regular de un desayuno suficiente y saludable son hábitos que parecen estar relacionados con menor riesgo de presentar resistencia a la insulina. Por tanto, es importante establecer hábitos alimentarios diarios equilibrados para prevenir y tratar la resistencia a la insulina en escolares y adolescentes.

Abstract Insulin resistance is described as a defect in the binding of insulin to its receptor and is associated with several diseases, including obesity and type 2 diabetes. Insulin resistance has been linked to vitamin and mineral deficiencies, especially those involved in oxidative stress. The Mediterranean diet, a diet based on the Healthy Eating Index or the Dietary Approaches to Stop Hypertension (DASH) diet are dietary patterns that have been associated with a lower risk of developing insulin resistance in children. Therefore, a diet rich in antioxidant vitamins and minerals, fiber, calcium, and polyunsaturated fatty acids and low in free sugars, sodium and saturated fatty acids may decrease the risk of insulin resistance in this age group. In addition, other nutritional factors, such as avoiding fast food, eating dinner with the family, not eating while watching TV or eating a sufficient and healthy breakfast on a regular basis seem to be associated with a lower risk of insulin resistance. Therefore, it is important to establish balanced daily eating habits to prevent and treat insulin resistance in schoolchildren and adolescents.

Resumen Está aumentando el número de personas que siguen dietas basadas en vegetales en mayor o menor grado, pero cuanto más restrictiva es una dieta, más riesgos existen de presentar deficiencias nutricionales. La etapa infantil es una etapa de gran crecimiento físico y madurativo, por ello, las deficiencias nutricionales en esta etapa pueden acarrear consecuencias graves y, en ocasiones, permanentes. Las personas que siguen dietas restrictivas de cualquier tipo, como son las dietas basadas en vegetales, deben recibir apoyo de personal especializado para conseguir que sus dietas sean variadas y equilibradas, como es deseable en cualquier caso.

Abstract The number of people following plant-based diets to a greater or lesser degree is increasing, but the more restrictive a diet, the greater the risk of nutritional deficiencies. The childhood stage is a stage of great physical and maturational growth, therefore, nutritional deficiencies at this stage can have serious and sometimes permanent consequences. People who follow restrictive diets of any kind, such as plant-based diets, should receive support from specialized staff to ensure that their diets are varied and balanced, as is desirable in any case.

Abstract Water is an essential nutrient for health. Inadequate water intake induces states of dehydration and hypovolemia,causing an increase in plasma osmolality proportional to the decrease in body water. Restricting water intake can have harmful effects on cardiovascular health by affecting endothelial function and increasing the viscosity of blood, haematocrit and fibrinogen. Adequate hydration is associated with lower risk of deadly coronary heart disease. Obesity and diabetes are risk factors for cardiovascular disease. Hypohydration is linked to weight gain and obesity. An association between adequate water intake and healthier body composition has been evidenced, there is an inverse relationship between water consumption and weight, body fat and waist circumference. In addition, water consumption decreases the risk of hyperglycemia and type 2 diabetes. Regarding the composition of water, a positive association between the level of calcium and magnesium and cardiovascular health has been observed. On the other hand, hydration also affects cognitive ability. Decreased fluid intake and dehydration have a negative impact on cognitive performance (attention, memory, learning and executive functions), improving cognitive function with rehydration.

Resumen El agua es un nutriente esencial para la salud. La ingesta inadecuada de agua induce estados de deshidratación e hipovolemia, lo que causa un aumento de la osmolalidad plasmática proporcional a la disminución del agua corporal. La restricción de la ingesta hídrica puede tener efectos nocivos sobre la salud cardiovascular al verse afectada la función endotelial y al aumentar la viscosidad de la sangre, el hematocrito y el fibrinógeno. Una hidratación adecuada se asocia con menor riesgo de enfermedad coronaria mortal. La obesidad y la diabetes son factores de riesgo de la enfermedad cardiovascular. La hipohidratación se relaciona con aumento de peso y de obesidad. Se ha evidenciado una asociación entre la ingesta adecuada de agua y una composición corporal más saludable. Existe una relación inversa entre el consumo de agua y el peso, la grasa corporal y la circunferencia de la cintura. Asimismo, el consumo de agua disminuye el riesgo de hiperglucemia y de diabetes tipo 2. Respecto a la composición del agua, se ha observado una asociación positiva entre el nivel de calcio y de magnesio y la salud cardiovascular. Por otra parte, la hidratación afecta a la capacidad cognitiva. Una disminución de la ingesta líquida y la deshidratación tienen un impacto negativo en el rendimiento cognitivo (atención, memoria, aprendizaje y funciones ejecutivas), mejorando la función cognitiva con la rehidratación.

Abstract Celiac disease is the most common chronic intestinal disease. It affects approximately 1 % of the world population, affects all age groups and has symptoms both digestive and extra-digestive. The treatment of celiac disease is based on the strict withdrawal of gluten from the diet. This treatment supposes the improvement of symptoms and histology and the reduction of long-term comorbidities. People with celiac disease often follow diets that are far from the theoretical ideal, so they must be supervised and guided to achieve gluten-free diets that are also varied and balanced. In these patients it is important to avoid gluten consumption, but also to achieve an adequate supply of nutrients. However, their health problems, together with the limitations they must introduce in the diet make it more difficult to achieve a correct diet, so the group deserves special nutritional monitoring and surveillance.

Resumen La enfermedad celíaca es la enfermedad crónica intestinal más frecuente que existe. Afecta aproximadamente al 1 % de la población mundial, a todos los grupos de edad y tiene síntomas de presentación tanto digestivos como extradigestivos. El tratamiento de la enfermedad celíaca se basa en la retirada estricta del gluten de la dieta. Este tratamiento supone la mejora de los síntomas y de la histología y la disminución de comorbilidades a largo plazo. Las personas con enfermedad celíaca realizan con frecuencia dietas alejadas del ideal teórico, por lo que deben ser supervisadas y orientadas para lograr dietas sin gluten y también variadas y equilibradas. En estos pacientes es importante evitar el consumo de gluten, pero también lograr un aporte adecuado de nutrientes y su problemática sanitaria, junto con las limitaciones que deben introducir en la dieta, hacen más difícil lograr una alimentación correcta, por lo que el colectivo merece una vigilancia y un control nutricional especiales.

Abstract Childhood obesity is a growing concern, because the problem affects a high percentage of children and is the source of many diseases in the present and in the future, which can lead to a decrease in life expectancy and quality of life. In order to combat the problem, it is necessary to analyze the factors associated with excess weight in childhood in order to act on them and try to curb the trend observed in recent years. Various socio-demographic aspects, as well as inactivity and sedentary lifestyle in children are factors that are associated with an increased risk of obesity and central adiposity. With great prominence in this issue, we have to highlight that the consumption of food is improvable: decrease the consumption of sugar, fat and sodium, and above all increase the consumption of fruits, vegetables, whole grains, fish, dairy is associated with lower obesity and central obesity in children. There is no single responsible for the problem and the interaction between healthy behaviors increases the chances of success in the fight against childhood obesity, which should be considered when planning nutritional education campaigns. Many aspects of the diet and lifestyle of the child population must be improved, perhaps now more emphasis is being placed on restrictive guidelines. Of course, it is desirable to reduce the consumption of sweets and snacks, but messages aimed at increasing the consumption of vegetables, fruits, whole grains and approximating the diet to the theoretical ideal can be prioritized. Constructive guidelines should stand out from restrictive ones.

Resumen La obesidad infantil es objeto de preocupación creciente, ya que es un problema que afecta a un elevado porcentaje de niños y es el origen de numerosas enfermedades en el presente y en el futuro, lo que puede condicionar un descenso en la esperanza y en la calidad de vida. Para combatir el problema es necesario analizar los factores que se asocian con el exceso de peso en la infancia para actuar sobre ellos e intentar frenar la tendencia observada en los últimos años. Diversos aspectos sociodemográficos, así como la inactividad y el sedentarismo de los niños, son factores que se asocian con un mayor riesgo de padecer obesidad y adiposidad central. Con gran protagonismo en este tema debe destacarse que el consumo de alimentos es mejorable: disminuir el consumo de azúcar, grasa y sodio, y sobre todo aumentar el de frutas, verduras, cereales integrales, pescado y lácteos, se asocia con menor padecimiento de obesidad y obesidad central en los niños. Pero no hay un único responsable del problema y la interacción entre conductas saludables aumenta las posibilidades de éxito en la lucha contra la obesidad infantil, lo que debe considerarse al planificar campañas de educación nutricional. Deben mejorarse numerosos aspectos de la alimentación y del estilo de vida de la población infantil. Quizá en este momento se hace más hincapié en pautas restrictivas. Aunque es muy conveniente reducir el consumo de dulces y de snacks, resulta muy deseable y quizá prioritario aumentar el consumo de verduras, hortalizas, frutas, cereales integrales y aproximar la dieta al ideal teórico. Las pautas constructivas deberían destacar respecto a las restrictivas.

Abstract Objective: active or passive tobacco use affects a high percentage of individuals and is associated with various health risks. The aim of this review was to look more closely at the nutritional problems that are specific of smokers, which may harm their health. Methods: a bibliographic search related to the topic. Results: smokers consume lower amounts of various foods, especially fruits, vegetables, cereals and dairy. As a result, their intake of vitamins, minerals, and phytochemicals is lower than that observed in non-smokers. Their consumption of meat, caffeine and alcohol is usually higher, and their activity lower than those of non-smokers, coexisting in smokers unhealthy behaviors that contribute to harming their health and quality of life. Oxidative stress and metabolic changes render the needs for some nutrients higher in smokers to achieve the same biochemical situation as in non-smokers. Recommended intakes of vitamin C have increased, but it will probably be necessary to also increase the intakes of other nutrients. In general, smokers suffer from deficiencies more frequently (vitamins C, E, β-carotene, B1, B2, B12, folic acid, calcium, magnesium, iron, iodine, etc.) than non-smokers. Passive smokers are also affected in their eating habits and nutritional status. Conclusions: the worse nutritional status of smokers can contribute to the appearance/worsening of various diseases associated with smoking (cardiovascular, cancer, cataracts, osteoporosis, etc.); therefore, nutritional surveillance and correction of nutritional deficiencies could represents health benefits for smokers and passive smokers, which should be considered in the future.

Resumen Objetivos: el consumo de tabaco, activo o pasivo, afecta a un elevado porcentaje de individuos y se asocia a diversos riesgos sanitarios. Profundizar en los problemas nutricionales específicos de los fumadores que pueden contribuir a perjudicar su salud constituye el objeto de la presente revisión. Métodos: búsqueda bibliográfica en relación con el tema. Resultados: los fumadores consumen cantidades inferiores de diversos alimentos, especialmente: frutas, verduras, cereales y lácteos. Como consecuencia, su ingesta de vitaminas, minerales y fitoquímicos es inferior a la observada en los no fumadores. Su consumo de carne, cafeína y alcohol suele ser superior y su actividad inferior a la de los no fumadores, coexistiendo en los fumadores conductas poco saludables que se potencian, perjudicando la salud y la calidad de vida del colectivo. El estrés oxidativo y los cambios metabólicos hacen que las necesidades de algunos nutrientes sean superiores en los fumadores para lograr la misma situación bioquímica que en los no fumadores. Las ingestas recomendadas de vitamina C se han incrementado, pero probablemente sea necesario aumentar las de otros nutrientes. En general, los fumadores sufren deficiencias con más frecuencia (vitaminas C, E, β-caroteno, B1, B2, B12, ácido fólico, calcio, magnesio, hierro, yodo, etc.) que los no fumadores. Los fumadores pasivos se ven afectados también en sus hábitos alimentarios y su situación nutricional. Conclusiones: la peor situación nutricional de los fumadores puede contribuir a la aparición/el empeoramiento de diversas patologías asociadas al hábito de fumar (cardiovasculares, cáncer, cataratas, osteoporosis, etc.), por lo que la vigilancia nutricional y la corrección de las deficiencias nutricionales podrían suponer un beneficio sanitario para los fumadores y fumadores pasivos que debe ser considerada en el futuro.

Abstract Zinc is an essential trace element involved in catalytic, structural, and regulatory functions, participating also in the metabolism of nutrients. Its role in insulin resistance appears to be of great importance, as it is involved in oxidative stress, the endocrine regulation of insulin, and the regulation of glucose uptake. For this reason, both intake and serum levels of zinc are inversely related to insulin resistance. Currently, zinc intake in children is low, and zinc deficiency exists in a significant proportion. Zinc can be found in meat, fish, eggs, and dairy products. Although it certainly is present in foods of plant origin, their high phytate contents generally reduce its bioavailability. For this reason, it is important to monitor intake throughout childhood, and to consider supplementation in children with insulin resistance or obesity.

Resumen El zinc es un oligoelemento esencial involucrado en funciones catalíticas, estructurales y de regulación, además de participar en el metabolismo de los nutrientes. Su función en la resistencia a la insulina parece tener gran importancia, ya que tiene relación con el estrés oxidativo, la regulación endocrina de la insulina y la regulación de la captación de glucosa. Por esta razón, tanto la ingesta como los niveles séricos de zinc se relacionan inversamente con la resistencia a la insulina. A día de hoy, la ingesta de zinc es insuficiente en muchos niños y existe deficiencia de este mineral en una importante proporción. El zinc lo podemos encontrar en carnes, pescados, huevos y lácteos. Aunque es cierto que también existe en los alimentos de origen vegetal, generalmente, su alto contenido en fitatos reduce la biodisponibilidad del zinc. Por esta razón es importante vigilar la ingesta a lo largo de toda la etapa infantil y considerar la suplementación en los niños con resistencia a la insulina u obesidad.

Abstract Malnutrition in pediatric patients conditions their health/illness. Malnutrition in sick children further aggravates their baseline situation, and conditions their evolution and prognosis. Despite its relevance, it is not evaluated in many cases, nor is there a single definition that facilitates its diagnosis. The objective of this article is to establish the principal aspects to consider when evaluating malnutrition, and to highlight the importance of routine evaluation.

Resumen La desnutrición en el paciente pediátrico condiciona su salud/enfermedad. La desnutrición en el niño enfermo agrava aun más, si cabe, su situación de base y condiciona su evolución y pronóstico. A pesar de su relevancia, no se evalúa en muchos casos ni se tiene una única definición que facilite su diagnóstico. El objetivo de este artículo es establecer los aspectos prioritarios a la hora de evaluar la desnutrición y resaltar la importancia de hacerlo de forma rutinaria.

Abstract The consumption of a healthy diet is essential during the preconception period, pregnancy and lactation to guarantee maternal-fetal and newborn health. It is important to take into account when configuring the maternal diet that inadequate intakes of vitamins and minerals, as well as a high consumption of foods or beverages with refined sugar increase the incidence of low birth weight infants, while the adequate consumption of micronutrients and carbohydrates (mainly integral) can decrease it. Prenatal consumption of fish is also associated with less intrauterine growth retardation. Maternal nutritional deficits that lead to intrauterine growth retardation can alter the expression of some genes, causing abnormal programming in organ and tissue development. In response, the fetus adapts to this situation of scarcity and may have difficulties adapting to an abundant consumption of food after birth, increasing its propensity to suffer from cardiovascular and metabolic diseases in adult life. After delivery, the nutrition of the infant must be guaranteed through breast milk. There is a relationship between the nutritional status of the mother and the composition of the mother's milk and, therefore, in the supply of nutrients to the infant, which may condition their health. Despite the great importance of an adequate maternal nutritional state, serum deficiencies in vitamins A, E, C, B2, B1, calcium and zinc are observed in pregnant mothers and breast milk, being important to identify and prevent these imbalances before conception and during pregnancy and lactation.

Resumen El consumo de una dieta saludable es esencial durante el periodo preconcepcional, embarazo y lactancia para garantizar la salud maternofetal y del neonato. Es importante tener en cuenta al configurar la dieta materna que ingestas inadecuadas de vitaminas y minerales, así como un elevado consumo de alimentos o bebidas con azúcar refinada, aumentan la incidencia de recién nacidos con bajo peso, mientras que el consumo adecuado de micronutrientes y de hidratos de carbono (principalmente integrales) pueden disminuirla. También el consumo prenatal de pescado se asocia con menor retraso del crecimiento intrauterino. Los déficits nutricionales maternos que conducen a un retraso del crecimiento intrauterino pueden alterar la expresión de algunos genes ocasionando una programación anormal en el desarrollo de órganos y tejidos. Como respuesta, el feto se adapta a esta situación de escasez y puede tener dificultad de adaptación ante un consumo abundante de alimentos después del nacimiento, lo cual aumenta su propensión al padecimiento de enfermedades cardiovasculares y metabólicas en la vida adulta. Después del parto, la nutrición del lactante debe estar garantizada mediante la leche materna. Existe una relación entre el estado nutritivo de la madre y la composición de la leche materna y, por lo tanto, el aporte de nutrientes al lactante, lo cual puede condicionar su salud. Pese a la gran importancia que tiene un adecuado estado nutritivo materno, se observan niveles séricos deficitarios en vitaminas A, E, C, B2, B1, calcio y zinc en madres gestantes y en leche materna, por lo que es importante identificar y prevenir estos desequilibrios antes de la concepción y durante el embarazo y la lactancia.

Abstract Objective: although osteoporosis develops in advanced stages of life, it must be prevented and stopped from the pediatric age, acting on modifiable factors, especially diet and lifestyle. The objective of this work is to review the latest evidence on nutritional improvements that can help in the prevention and control of the disease. Methods: bibliographic search related to the topic. Results: it is advisable to avoid energy restrictions, especially in postmenopausal women and particularly if they have osteopenia/osteoporosis since, in relation to these pathologies, excess weight may be preferable, rather than underweight. Protein intake higher than the recommended one is beneficial for the bone, provided that the calcium intake is adequate. Excessive intake of sugar and saturated fat should be avoided, but attempts should be made to achieve the nutritional goals set for ω-3 polyunsaturated fatty acids and fiber. It is important to monitor vitamin D status and calcium intake, which is inadequate in high percentages of individuals, as well as improving the contribution of vitamins K, C and group B, and also magnesium, potassium, iron, zinc, copper, fluorine, manganese, silicon and boron, and avoiding the excessive contribution of phosphorus and sodium. Conclusions: osteoporosis is an underdiagnosed pathology and of increasing prevalence. Due to its high morbidity and mortality, prevention is important and, from a nutritional point of view, it is convenient to bring the diet closer to the theoretical ideal. In general, increasing the consumption of dairy products, fish, vegetables and fruits, as well as reducing the consumption of salt, during childhood and throughout life, seems convenient for the bone improvement of most of the population.

Resumen Introducción y objetivos: la osteoporosis, aunque se manifiesta en etapas avanzadas de la vida, se debe prevenir y frenar desde la edad pediátrica, actuando sobre los factores modificables, especialmente la alimentación y el estilo de vida. El objetivo del presente trabajo es revisar las últimas evidencias sobre las mejoras nutricionales que pueden ayudar en la prevención y el control de la enfermedad. Métodos: búsqueda bibliográfica en relación con el tema. Resultados: conviene evitar las restricciones energéticas, especialmente en mujeres posmenopáusicas, sobre todo si tienen osteopenia/osteoporosis dado que, en relación con estas patologías, puede ser preferible un exceso de peso frente a un peso insuficiente. Una ingesta proteica superior a la recomendada es beneficiosa para el hueso siempre que la ingesta de calcio sea adecuada. Se debe evitar una ingesta excesiva de azúcar y de grasa saturada, pero se deben intentar alcanzar los objetivos nutricionales marcados para los ácidos grasos poliinsaturados ω-3 y la fibra. Es importante vigilar la situación en vitamina D y la ingesta de calcio, que es inadecuada en elevados porcentajes de individuos. También conviene mejorar el aporte de vitaminas K, C y del grupo B, así como de magnesio, potasio, hierro, zinc, cobre, flúor, manganeso, silicio y boro, y evitar el aporte excesivo de fósforo y sodio. Conclusiones: la osteoporosis es una patología infradiagnosticada y de prevalencia creciente. Por su elevada morbilidad y mortalidad es importante la prevención y desde el punto de vista nutricional conviene aproximar la dieta al ideal teórico. En general, el incremento en el consumo de lácteos, pescado, verduras, hortalizas y frutas, así como la reducción del consumo de sal, durante la infancia y a lo largo de la vida parecen convenientes para la mejora ósea de la mayor parte de la población.

Abstract The microbiota of our body is a rising issue on which more and more research is being studied and investigated. The acquisition and modification of the microbiota throughout life, and especially the alteration of its balance, is related to different diseases. One way to modify this microbiota, which can also be useful in disease situations, to restore the proper balance is through the consumption of marketed probiotics. There are very different types of probiotics and not all of them have demonstrated effectiveness in all indications or situations. Therefore, the objective of this article is to explain those indications of probiotics for which evidence has been described according to different guides and scientific studies.

Resumen La microbiota que existe en todo nuestro organismo es un tema de actualidad sobre el que cada vez se estudia e investiga más. La adquisición y modificación de la microbiota a lo largo de la vida, y especialmente la alteración de su equilibrio, está relacionada con diferentes enfermedades. Una manera de modificar esta microbiota, y que puede ser útil en situaciones de enfermedad, para restablecer el adecuado equilibrio es a través del consumo de probióticos comercializados. Existen muy diferentes tipos de probióticos y no todos han demostrado efectividad en todas las indicaciones ni situaciones, por lo tanto, el objetivo de este artículo es explicar aquellas indicaciones de los probióticos para las que se ha descrito evidencia según diferentes guías y estudios científicos.

Abstract Objectives: given the growing increase in overweight and obesity, it is important to pay attention to all sociodemographic and lifestyle influences that contribute to unbalance the energy balance, favoring this trend. Methods: bibliographic searching in relation to the subject. Results: as factors associated with the obesity condition, it is observed that sedentary lifestyle, scarce physical activity, passive leisure and a high number of hours in front of screens (TV, computer...) and reduction in the time spent sleeping. Moreover, low level of income and low educational level, favor excess weight, there being an additional association between these sociodemographic factors with non-compliance with the Dietary Guidelines and the gap of the diet from to what is marked as advisable. Particularly, spent a lot of time in front of a screen and a short duration of sleep are associated with more frequent consumption of foods with high energy density and few micronutrients and low consumption of fruits and vegetables. Specifically, in men and adjusting for age, it is observed that an insufficient intake of cereals (< 4 servings / day) and fruits and vegetables (< 5 servings / day) is associated with greater risk of overweight and of central adiposity, being remarkable the worst adherence to recommended dietary guidelines in individuals with excess weight and central adiposity. Conclusions: strategies to prevent and reduce excess weight should consider these influences, which are associated and potentiated, in order to achieve more efficiency in the weight improvement of the population.

Resumen Objetivos: ante el aumento creciente del sobrepeso y de la obesidad es importante prestar atención a todas las influencias sociodemográficas y de estilo de vida que contribuyen a desequilibrar el balance energético y que favorecen esta tendencia. Métodos: búsqueda bibliográfica relacionada con el tema. Resultados: como factores asociados al padecimiento de obesidad, se constata el creciente sedentarismo, la escasa actividad física, el ocio pasivo, el elevado número de horas delante de pantallas (televisión, ordenador...) y la reducción del tiempo dedicado a dormir. Por otra parte, el bajo nivel de ingresos y el bajo nivel educativo favorecen el exceso de peso, y existe una asociación adicional entre estos factores sociodemográficos y el incumplimiento de las guías de alimentación con el alejamiento de la dieta respecto a lo marcado como aconsejable. En concreto, un elevado tiempo ante una pantalla y una corta duración del sueño se asocian con una mayor frecuencia del consumo de alimentos con alta densidad energética y pobres en micronutrientes y con bajo consumo de frutas y vegetales. En este sentido, en varones y ajustando por edad, se observa que un consumo insuficiente de cereales (<4 raciones/día) y de frutas y verduras (<5 raciones/día) se asocia con mayor riesgo de sobrepeso y de adiposidad central. Destaca la peor adherencia a las pautas dietéticas aconsejadas en individuos con exceso de peso y adiposidad central. Conclusiones: las estrategias para prevenir y reducir el exceso de peso deben tener en cuenta estas influencias, que se asocian y potencian, para lograr más eficacia en la mejora ponderal de la población.

Abstract Cognitive capacity can be influenced by components of the diet. Low glycemic index foods seem to improve attention, memory and functional capacity, while those rich in simple sugars are associated with difficulty in concentration and attention. The brain needs a continuous supply of amino acids for the synthesis of neurotransmitters, especially serotonin and catecholamines. Low levels of serotonin have been linked to decreased learning, reasoning and memory. The quality and type of dietary fat can also affect intellectual and mental capacity. High saturated fat intake has been related to cognitive deterioration while the consumption of polyunsaturated fatty acids (docosahexaenoic acid) has beneficial effects in their prevention. It is advisable to consume diets with an adequate ratio (5:1) of omega-6: 3 fatty acids (Mediterranean diet) given that they are associated with better memory capacity and lower risk of cognitive deterioration. Vitamins B1, B6, B12, B9 (folic acid) and D, choline, iron and iodine exert neuroprotective effects and improve intellectual performance. In parallel, antioxidants (vitamins C, E, A, zinc, selenium, lutein and zeaxanthin) have a very important role in the defense against oxidative stress associated with mental deterioration and in the improvement of cognition. Currently, there is a high consumption of diets rich in saturated fats and refined sugars and low intake of fruits, vegetables and water that can negatively affect cognitive ability. Adequate nutrition is necessary to optimize brain function and prevent cognitive decline.

Resumen La capacidad cognitiva puede verse influida por los componentes de la dieta. Los alimentos de bajo índice glucémico parecen mejorar la atención, la memoria y la capacidad funcional, mientras que los ricos en azúcares simples se asocian con dificultad de concentración y atención. El cerebro necesita un aporte continuado de aminoácidos para la síntesis de neurotransmisores, especialmente serotonina y catecolaminas. Niveles bajos de serotonina se han relacionado con una disminución del aprendizaje, del razonamiento y de la memoria. La calidad y el tipo de grasa alimentaria también pueden afectar a la función intelectual y mental. La elevada ingesta de grasa saturada se ha relacionado con un deterioro cognitivo, mientras que el consumo de ácidos grasos poliinsaturados (docosahexaenoico) tiene efectos beneficiosos en su prevención. Es aconsejable el consumo de dietas con una adecuada proporción (5:1) de ácidos grasos omega-6:3 (dieta mediterránea), dado que se asocian con una mejor memoria y un menor riesgo de deterioro cognitivo. Las vitaminas B1, B6, B12, B9 (ácido fólico) y D, colina, hierro y yodo ejercen efectos neuroprotectores y mejoran el rendimiento intelectual. Paralelamente, los antioxidantes (vitaminas C, E y A, cinc, selenio, luteína y zeaxantina) tienen un papel muy importante en la defensa contra el estrés oxidativo asociado al deterioro mental y en la mejora de la cognición. Actualmente, existe un elevado consumo de dietas ricas en grasas saturadas y azúcares refinados y baja ingesta de frutas, verduras y agua, lo que puede ser desfavorable para la capacidad cognitiva. Una nutrición adecuada es necesaria para optimizar la función cerebral y prevenir el deterioro cognitivo.

Abstract Metabolic syndrome is the name given to a set of risk factors that increases the risk of cardiovascular disease and other health problems, such as diabetes and stroke. There are different cut-off points to establish the definition of metabolic syndrome according to various international organizations, although in all definitions are considered four main data related to: 1) obesity; 2) alteration of glucose metabolism; 3) alteration of lipid metabolism; and 4) hypertension. Strategies for the treatment of the metabolic syndrome include changes in lifestyle (diet and physical activity), along with pharmacological treatment in certain cases. There is little evidence of the effect of different micronutrients in this syndrome, although there are many investigations in this line.

Resumen El síndrome metabólico es el nombre que se da a un conjunto de factores de riesgo que aumenta el riesgo de enfermedad cardiovascular y otros problemas de salud, como diabetes y accidente cerebrovascular. Existen diferentes puntos de corte para establecer la definición de síndrome metabólico según diversos organismos internacionales, si bien en todas las definiciones se consideran cuatro pilares básicos: 1) obesidad; 2) alteración del metabolismo de la glucosa; 3) alteración del metabolismo de los lípidos; e 4) hipertensión arterial. Las estrategias para el tratamiento del síndrome metabólico incluyen cambios en el estilo de vida (dieta y actividad física) junto con tratamiento farmacológico en determinados casos. Se tiene poca evidencia sobre el efecto de diferentes micronutrientes en dicho síndrome, aunque existen múltiples investigaciones en esta línea.

Proper nutrition during childhood is necessary to: allow adequate growth and development, achieve optimal physical and psychic performance, maintain and improve health and recover more easily in disease processes. The first months of life (the infant stage) are a stage in which many rapid changes take place (anthropometric, body composition, maturation of organs and systems...), which suppose a high demand from nutritional point of view, in the quantitative aspect and especially in the qualitative aspect. After infant stage, preschool children feeding is an opportunity to acquire healthy habits and introduce new foods, textures, flavors, colors, etc., which will favor the autonomy and development of the individual, as well as being essential to maintain growth and development.

Una alimentación correcta durante la infancia es necesaria para: permitir un crecimiento y desarrollo adecuados, conseguir un rendimiento físico y psíquico óptimo, mantener y mejorar la salud y recuperarse más fácilmente en los procesos de enfermedad. Los primeros meses de vida (la etapa de lactante) son una etapa en la que tienen lugar muchos cambios rápidos (antropométricos, de composición corporal, de maduración de órganos y sistemas...), que suponen una demanda exigente desde el punto de vista nutricional, en el aspecto cuantitativo y sobre todo cualitativo. Pasada la etapa de lactante, la alimentación del preescolar supone una oportunidad de adquisición de hábitos saludables e introducción de nuevos alimentos, texturas, sabores, colores, etc., que van a favorecer la autonomía y el desarrollo del individuo, además de ser imprescindible para mantener el crecimiento y desarrollo.
